Chef/owner, Duy Pham comes from Denver where he has dedicated nineteen years into the industry. He has worked for some of the best restaurants such as Tante Louise and The Normandy. He has studied under several talented chefs with his background mainly in classical French.
Our vision in Pueblo is to offer something different and unique that is not currently being offered elsewhere in town. The style of food is a collection of the chefs past and new creations. The fine cuisine is French in style and preparation with a mixture of both classic and contemporary touch. Made from scratch with all the best ingredients the season has to offer. everything is cooked to order and offered at moderate prices. Our goal is to utilize as many local products as possible to support local businesses and farmers. This ensures the best products possible at their peak season.
The name Restaurant Fifteen Twentyone comes from an address in Paris where the owners fell in love. Food was the foundation that brought the two together from the beginning. Fifteen Twentyone symbolizes the passion for love and most important fine cuisine.
